CAKE WITH FRESH COW SWEET CHEESE

 INGREDIENTS : margarine- 200 g; sugar – 300 g; fresh cow cheese – 500 g ; 2 eggs ; 10 tea spoons of warm milk ; currants ; half a – tea-spoonful of sodium bicarbonate ; flour as much as necessary ; vanilla ;

DOUGH : In a recipient , mix well the margarine , taken out of the fridge a while before, with half of the sugar quantity in order to obtain a paste . Add an egg . Add alternatively the salt , the warm milk and the flour , previously sifted , the bicarbonate with the lemon juice , the scraped lemon peel and the vanilla . Add flour as much as necessary in order to obtain a firm dough . Divide the dough into 2 parts . Half of it will be stretched on a dough board with a special stick and will be placed on a round tray .

FILLING : In another recipient , mix the cow sweet cheese with the second egg .

Incorporate the currants , sprinkled with rum , the scraped lemon peel and vanilla . Add the rest of the rum . Put the filling over the first layer of dough and cover it with the second layer .

Place the tray in a hot oven .

After baking , let the cake cool , powder it with sugar and slice it .
