RECIPES       

             Put the following phases in the right

order to bake madeleines.

MADELEINES

Cakes with a lemon flavour which melt in the mouth

 

Preparation : 20 minutes              

Baking : 10 minutes

 Ingredients

- 2 eggs

- 150 g granulated sugar

- 150 g flour

- 125 g butter

- 1 grated lemon zest

- ½ teaspoon backing powder (optional )

- 1 mould of madeleines

 

A. Butter the divisions of the mould and fill them with the mixture. Bake in a hot oven 10 minutes (gas mark 7).

 

B. Beat the eggs with the sugar until the mixture becomes foamy.

 

C. Taste them, with tea or a home-made compote.

 

D. Add the melted butter and flour to the mixture, spoon after spoon, then add the zest.

 

E. Turn out and let cool.

 

Secret : Take a first quality butter, dairy butter, if  possible
